Founded in 2015 by Connie DeSousa and John Jackson, charbar has become one of Calgary’s most distinctive dining destinations. Following a major kitchen renovation in 2026, the restaurant enters its next chapter as Calgary’s first Wood Fire Steakhouse, deeply rooted in heritage, driven by innovation, and focused on delivering bold, fire-driven cuisine.

History

Housed in the restored 1912 Simmons Building landmark, charbar blends original exposed brick, timber beams, and vaulted ceilings with contemporary design. As guests move through the dining room, past displays of ultra–dry-aged Alberta beef and into the refined cocktail bar, anticipation builds toward the heart of the restaurant: the custom Argentine wood-fired grill.

Location & Setting

Located in the historic Simmons Building along the Bow River in Calgary’s East Village, charbar anchors a collaborative culinary hub alongside Sidewalk Citizen Bakery and Phil & Sebastian Coffee Roasters. With expansive windows, riverfront patio, and Connie and John’s Pizza rooftop patio & bar overlooking St. Patrick’s Island and the skyline. The space is designed for connection, conversation, and shared experiences. 

The Wood-Fired Grill

The custom-built Argentine parrilla, the first of its kind in Alberta, is the soul of charbar. Rooted in the tradition of bringing communities together over open flame, the grill represents craftsmanship, collaboration, and connection. charbar is the only restaurant in the province grilling ultra–dry-aged Alberta beef, maximizing natural flavour and tenderness through precise fire control.

Menu Philosophy

The menu celebrates ingredients from the ocean, prairies, and local gardens. Guests experience bold wood-fired steaks, tableside smoked steak tartare and ceviche mixto. Vegetarian cuisine is equally celebrated, with shareable small plates designed to highlight seasonal produce and encourage communal dining.
